Marinated Feta Cheese
Mixed Greens with Citrus Vinaigrette
Ingredients
- ½ cup extra virgin olive oil
- 2 tsp lemon zest
- ¼ cup lemon juice
- 2 Tbsp honey, warmed
- 4 cloves garlic, minced
- ½ tsp crushed red pepper
- 2 (8-oz) blocks feta cheese
Instructions
- Whisk together oil, lemon zest, lemon juice, honey, garlic, and red pepper in a bowl.
- Combine marinade and cheese in a large zip-top plastic bag; seal and marinate 4 to 8 hours, turning once.
- Remove cheese from marinade; discard marinade. Cut cheese into 6 servings; serve over Mixed Greens with Citrus Vinaigrette recipe.

- 1 small orange
- 1 lemon
- ¼ cup extra virgin olive oil
- ¼ tsp salt
- ¼ pepper
- 1 (10-oz) pkg mixed baby greens
- 1 grapefruit, peeled and sectioned
- ¾ cup roasted salted pistachios, chopped
Side Dish Instructions
- Grate zest and squeeze juice from orange and lemon.
- Whisk together juices, oil, salt, and pepper in a bowl. Add greens, grapefruit, and nuts; toss.
