Asian Beef Lettuce Wraps

Ingredients

  • ¾ lb ground beef
  • 1 (8-oz) pkg whole mushrooms, thinly sliced
  • ½ cup chopped onion
  • ⅓ cup shredded carrots
  • 1 Tbsp sesame oil
  • ½ (10-oz) pkg angel hair coleslaw
  • 2 Tbsp low-sodium soy sauce
  • ½ tsp ground ginger
  • ¼ tsp garlic powder
  • ½ head iceberg lettuce, separated into leaves

Instructions

  1. Cook beef, mushrooms, onion, and carrots in hot oil in a large skillet over medium-high heat 8 minutes or until beef is browned and crumbly.
  2. Add coleslaw; cook 3 minutes or until it begins to wilt.
  3. Stir together soy sauce, ginger, and garlic powder; pour over vegetables. Cook 1 minute or until thoroughly heated.
  4. Serve beef mixture in lettuce leaves.
