Corn Chip Pie Bowls

Ingredients

  • ¾ lb ground beef
  • 1 (8-oz) can tomato sauce
  • ½ (15-oz) can black beans, drained and rinsed
  • ½ (15-oz) can whole kernel corn, drained
  • 1 (10-oz) can enchilada sauce
  • ½ (1.25-oz) envelope chili seasoning mix
  • ½ (9.25-oz) pkg corn chips
  • ½ cup shredded Cheddar cheese
  • ½ (8-oz) pkg shredded iceberg lettuce
  • ¼ cup sour cream

Instructions

  1. Cook beef in a Dutch oven over medium heat until browned and crumbly; drain and return to pot.
  2. Stir in tomato sauce, beans, corn, enchilada sauce, and chili seasoning; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Divide desired amount of corn chips among 2 bowls. Top with chili mixture, cheese, lettuce, and sour cream. Serve immediately.
