Bistro Chicken Salad
Ingredients
- 2 (12.5-oz) cans chunk chicken, drained (see Note)
- ½ cup olive-oil mayonnaise
- ½ cup chopped pecans
- 2 Tbsp Dijon mustard, divided
- 1 Tbsp lemon juice
- 1 tsp dried tarragon
- 1 (10-oz) pkg mixed baby greens
- 1 (16-oz) pkg strawberries, sliced
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
Instructions
- Combine chicken, mayonnaise, nuts, 1 Tbsp mustard, lemon juice, and tarragon in a large bowl. Season with salt and pepper to taste.
- Divide greens and strawberries among plates.
- Whisk together 1 Tbsp mustard, oil, vinegar, and honey. Drizzle dressing over greens; top with chicken salad.
