Bistro Chicken Salad

Ingredients

  • 2  (12.5-oz) cans chunk chicken, drained (see Note)
  • ½ cup olive-oil mayonnaise
  • ½ cup chopped pecans
  • 2 Tbsp Dijon mustard, divided
  • 1 Tbsp lemon juice
  • 1 tsp dried tarragon
  • 1 (10-oz) pkg mixed baby greens
  • 1 (16-oz) pkg strawberries, sliced
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey

Instructions

  1. Combine chicken, mayonnaise, nuts, 1 Tbsp mustard, lemon juice, and tarragon in a large bowl. Season with salt and pepper to taste.
  2. Divide greens and strawberries among plates.
  3. Whisk together 1 Tbsp mustard, oil, vinegar, and honey. Drizzle dressing over greens; top with chicken salad.
