Mediterranean Tuna Salad

Ingredients
- 3 Tbsp extra virgin olive oil
- 3 Tbsp fresh lemon juice
- 1 Tbsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- 4 (5-oz) cans wild-caught tuna in water, drained and flaked
- 1 cucumber, peeled and sliced
- 1 pint grape tomatoes, finely chopped
- ¼ cup finely chopped red onion
- 2 Tbsp capers
- ¼ cup chopped fresh parsley
- 3 avocados, sliced
- 1 (5-oz) pkg arugula
Instructions
- Whisk together oil, lemon juice, mustard, salt, and pepper in a large bowl.
- Stir in tuna, cucumber, tomatoes, onion, capers, and parsley. Gently stir in avocado and arugula. Divide among 6 plates; serve immediately.
