Mediterranean Tuna Salad

Ingredients

  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • 4 (5-oz) cans wild-caught tuna in water, drained and flaked
  • 1 cucumber, peeled and sliced
  • 1 pint grape tomatoes, finely chopped
  • ¼ cup finely chopped red onion
  • 2 Tbsp capers
  • ¼ cup chopped fresh parsley
  • 3 avocados, sliced
  • 1 (5-oz) pkg arugula

Instructions

  1. Whisk together oil, lemon juice, mustard, salt, and pepper in a large bowl.
  2. Stir in tuna, cucumber, tomatoes, onion, capers, and parsley. Gently stir in avocado and arugula. Divide among 6 plates; serve immediately.
