Ingredients

  • ⅓ cup olive oil
  • ¼ cup fresh lime juice
  • 3 Tbsp Southwest seasoning (or use fajita seasoning)
  • 2 (8.5-oz) pkg ready elbow macaroni
  • 2 (15-oz) cans black beans, drained and rinsed
  • 1 (15-oz) can whole kernel corn, drained
  • 1 (16-oz) container fresh salsa
  • 1 (8-oz) pkg shredded Mexican-blend cheese
  • 1 (12-oz) pkg tortilla chips
  • 1 (10-oz) pkg chopped romaine lettuce

Instructions

  1. Whisk together oil, lime juice, and seasoning in a large bowl.
  2. Microwave pasta according to package directions; rinse with cold water.
  3. Stir pasta, beans, corn, salsa, and cheese into oil mixture. Divide chips among 6 plates. Top with lettuce and pasta mixture.
