Taco Pasta Toss
Ingredients
- ⅓ cup olive oil
- ¼ cup fresh lime juice
- 3 Tbsp Southwest seasoning (or use fajita seasoning)
- 2 (8.5-oz) pkg ready elbow macaroni
- 2 (15-oz) cans black beans, drained and rinsed
- 1 (15-oz) can whole kernel corn, drained
- 1 (16-oz) container fresh salsa
- 1 (8-oz) pkg shredded Mexican-blend cheese
- 1 (12-oz) pkg tortilla chips
- 1 (10-oz) pkg chopped romaine lettuce
Instructions
- Whisk together oil, lime juice, and seasoning in a large bowl.
- Microwave pasta according to package directions; rinse with cold water.
- Stir pasta, beans, corn, salsa, and cheese into oil mixture. Divide chips among 6 plates. Top with lettuce and pasta mixture.
