Wasabi Chicken Rice Bowls

Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • 1 cup frozen shelled edamame
  • 2 (12.5-oz) cans chunk chicken, drained (see Note)
  • 2 limes
  • ½ cup olive-oil mayonnaise
  • 1 tsp wasabi paste
  • ½ tsp salt
  • 2 cups shredded red cabbage
  • 1 English cucumber, chopped

Instructions

  1. Microwave rice and edamame according to package directions. Chop chicken, and heat chicken in microwave 1 to 2 minutes.
  2. Grate zest and squeeze juice from limes. Whisk together lime zest, lime juice, mayonnaise, wasabi paste, and salt.
  3. Divide brown rice among bowls; top with cabbage, cucumber, edamame, and chicken. Drizzle with wasabi mayonnaise before serving.
