Ingredients

  • 2 (8.8-oz) pkg microwavable brown rice
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • 2 cups shredded romaine lettuce
  • 1 (12.5-oz) can chunk chicken, drained
  • 1 (4.5-oz) can chunk chicken, drained
  • 1 cup shredded Cheddar cheese
  • ½ cup fresh salsa
  • 2 avocados, sliced
  • ½ cup sour cream

Instructions

  1. Heat rice according to package directions. Combine rice, chili powder, cumin, and salt.
  2. Divide lettuce among 6 bowls; top with rice, all of chicken, cheese, salsa, avocado, and sour cream.
