Spaghetti 'n' Meatball Muffin Cups

Ingredients

  • 1 (8-oz) pkg spaghetti
  • 1 (24-oz) jar pasta sauce, divided
  • 1 cup freshly grated Parmesan cheese
  • ½ cup miniature pepperoni
  • 2 large eggs, lightly beaten
  • 1 (12-oz) pkg frozen meatballs, thawed
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Cook spaghetti according to package directions; drain and place in a large bowl.
  2. Add ¼ cup pasta sauce, Parmesan cheese, pepperoni, and eggs; toss.
  3. Divide pasta mixture among cups of a lightly greased 12-cup muffin pan, pressing each gently.
  4. Place 1 meatball in center of each muffin cup, nestling into pasta.
  5. Spoon about 1 Tbsp pasta sauce over each meatball; sprinkle with mozzarella cheese.
  6. Bake 25 to 30 minutes or until lightly browned. Cool in pans 5 minutes before serving.
