Creamy Turmeric Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs, cubed
  • 1 large onion, chopped
  • ¾ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 Tbsp ground turmeric
  • ½ tsp garlic powder
  • ¾ cup low-sodium chicken broth
  • ¾ cup heavy cream
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook chicken, onion, salt, and pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Stir in turmeric and garlic powder.
  2. Add broth and cream to skillet; cook 5 to 6 minutes or until sauce is thickened and chicken is done. Top with cilantro.

Side Dish Ingredients

  • 2 (3.5-oz) pouches boil-in-bag brown rice 
  • 1 (12-oz) pkg frozen green peas
  • 2 Tbsp olive oil
  • 3 green onions, thinly sliced
  • ½ cup pine nuts (or use walnuts)
  • ½ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook peas in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until browned and tender. Add rice to peas. Stir in onions, nuts, and salt.
