Blackened Salmon Tacos
Peach-Avocado Salsa
Ingredients
- ½ lb salmon fillets
- 2 tsp blackened seasoning
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 4 cassava flour tortillas (or use corn tortillas)
- 1 cup thinly sliced red cabbage
- ¼ cup sour cream
Instructions
- Preheat broiler. Rub fish with seasoning.
- Drizzle oil in a cast-iron skillet or ovenproof pan. Add fillets to skillet, and broil 3 to 4 minutes per side or until blackened and fish flakes with a fork.
- Break fish into chunks; drizzle with lime juice. Serve fish in tortillas with cabbage, sour cream, and Peach-Avocado Salsa recipe.
Side Dish Ingredients
- 1 peach, chopped (or use a nectarine)
- ⅓ cup fresh salsa
- 1 avocado, diced
- Dash of salt
- Dash of pepper
Side Dish Instructions
- Toss together all ingredients in a bowl.
