Blackened Salmon Tacos

Peach-Avocado Salsa

Ingredients

  • ½ lb salmon fillets
  • 2 tsp blackened seasoning
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 4 cassava flour tortillas (or use corn tortillas)
  • 1 cup thinly sliced red cabbage
  • ¼ cup sour cream

Instructions

  1. Preheat broiler. Rub fish with seasoning.
  2. Drizzle oil in a cast-iron skillet or ovenproof pan. Add fillets to skillet, and broil 3 to 4 minutes per side or until blackened and fish flakes with a fork.
  3. Break fish into chunks; drizzle with lime juice. Serve fish in tortillas with cabbage, sour cream, and Peach-Avocado Salsa recipe.

Side Dish Ingredients

  • 1 peach, chopped (or use a nectarine)
  • ⅓ cup fresh salsa
  • 1 avocado, diced
  • Dash of salt
  • Dash of pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
