Blackened Shrimp

Corn and Blistered Bell Peppers

Ingredients

  • 1 lb peeled and deveined, wild-caught raw shrimp (or use frozen shrimp)
  • 1½ Tbsp blackened seasoning
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • ½ lemon, cut into wedges

Instructions

  1. Coat shrimp with blackened seasoning; chill 30 minutes.
  2. Melt butter with oil in a large nonstick skillet over medium heat; add shrimp. Cook 2 to 3 minutes or until shrimp turn pink. Serve with lemon wedges.

  • 2 ears corn, shucked
  • ¼ tsp salt, divided
  • ¼ tsp pepper
  • 2 organic bell peppers (any color), cut into 1-inch strips
  • 2 Tbsp olive oil
  • 1 tsp garlic powder

Side Dish Instructions

  1. Preheat oven to 450°F. Boil corn in water to cover 8 to 10 minutes or until tender; drain. Sprinkle with ⅛ tsp each salt and pepper.
  2. Toss bell peppers with oil, garlic powder, and ⅛ tsp each salt and pepper; place on a greased rimmed baking sheet.
  3. Bake 10 to 15 minutes or until blistered and tender.
