Blackened Shrimp
Corn and Blistered Bell PeppersIngredients
- 1 lb peeled and deveined, wild-caught raw shrimp (or use frozen shrimp)
- 1½ Tbsp blackened seasoning
- 2 Tbsp butter
- 2 Tbsp olive oil
- ½ lemon, cut into wedges
Instructions
- Coat shrimp with blackened seasoning; chill 30 minutes.
- Melt butter with oil in a large nonstick skillet over medium heat; add shrimp. Cook 2 to 3 minutes or until shrimp turn pink. Serve with lemon wedges.
Side Dish Ingredients
- 2 ears corn, shucked
- ¼ tsp salt, divided
- ¼ tsp pepper
- 2 organic bell peppers (any color), cut into 1-inch strips
- 2 Tbsp olive oil
- 1 tsp garlic powder
Side Dish Instructions
- Preheat oven to 450°F. Boil corn in water to cover 8 to 10 minutes or until tender; drain. Sprinkle with ⅛ tsp each salt and pepper.
- Toss bell peppers with oil, garlic powder, and ⅛ tsp each salt and pepper; place on a greased rimmed baking sheet.
- Bake 10 to 15 minutes or until blistered and tender.
