Blackened Catfish

Ingredients

  • 1 lb catfish fillets, thawed and patted dry
  • 2 Tbsp butter, melted
  • 1 Tbsp blackened seasoning
  • 1½ Tbsp olive oil

Instructions

  1. Dip fillets in melted butter; sprinkle with blackened seasoning.
  2. Heat a cast-iron skillet over high heat on stove top, or grill outdoors using a grill pan.
  3. Heat oil in skillet; cook fillets 3 to 4 minutes per side or until fish flakes with a fork.

Side Dish Ingredients

  • ½ cup mayonnaise
  • 1½ Tbsp apple cider vinegar
  • 1 Tbsp spicy brown mustard
  • 1 tsp Creole seasoning
  • ½ (16-oz) pkg tricolor coleslaw
  • ½ green bell pepper, cut into julienne strips
  • 1 green onion, thinly sliced

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, mustard, and Creole seasoning in a bowl.
  2. Add coleslaw, bell pepper, and onion; toss.
