Garlic-Rubbed Flank Steak

Ingredients

  • 1 Tbsp olive oil, divided
  • ½ Tbsp minced garlic
  • ½ Tbsp paprika
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ¾ lb flank steak, trimmed 
  • 1 onion, sliced

Instructions

  1. Preheat broiler. Combine ½ Tbsp oil, garlic, paprika, salt, and pepper in a medium bowl. Add beef and onion to bowl; toss.
  2. Heat ½ Tbsp oil in an ovenproof skillet over medium-high heat. Add beef and onion; cook 4 minutes on one side, and turn. Place skillet in oven.
  3. Broil 8 to 10 minutes, turning steak once and stirring onions. Let stand 10 minutes; thinly slice beef across the grain.

  • 1 Tbsp olive oil, divided
  • 1 romaine lettuce heart, halved lengthwise
  • 1½ Tbsp mayonnaise
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • 2 Tbsp freshly grated Parmesan cheese
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat; brush ½ Tbsp oil on cut sides of lettuce.
  2. Grill 2 minutes or until lettuce is slightly charred, turning often.
  3. Whisk together ½ Tbsp oil, mayonnaise, lemon juice, garlic, cheese, salt, and pepper; drizzle dressing over lettuce.
