Tex-Mex Sloppy Joes
Cilantro-Lime ColeslawIngredients
- 1½ lb ground beef
- 1 onion, chopped
- 1 (10-oz) can enchilada sauce
- 1 (8-oz) can tomato sauce
- 1 (1-oz) envelope taco seasoning mix
- 1 (15-oz) can black beans, drained and rinsed
- 2 cups frozen corn
- 6 hamburger buns
Instructions
- Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
- Stir in enchilada sauce, tomato sauce, taco seasoning mix, beans, and corn.
- Cover and cook on LOW 8 hours.
- Toast buns, cut sides up, if desired. Serve beef mixture on buns with desired amount of Cilantro-Lime Coleslaw recipe.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- ½ cup mayonnaise
- ¼ cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 1 tsp honey
Side Dish Instructions
- Stir together coleslaw, mayonnaise, cilantro, lime juice, and honey in a large bowl; season with salt and pepper to taste.
