Cilantro-Lime Coleslaw

Ingredients

  • 1½ lb ground beef
  • 1 onion, chopped
  • 1 (10-oz) can enchilada sauce
  • 1 (8-oz) can tomato sauce
  • 1 (1-oz) envelope taco seasoning mix
  • 1 (15-oz) can black beans, drained and rinsed
  • 2 cups frozen corn
  • 6 hamburger buns

Instructions

  1. Cook beef and onion in a large skillet over medium heat until beef is browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
  2. Stir in enchilada sauce, tomato sauce, taco seasoning mix, beans, and corn.
  3. Cover and cook on LOW 8 hours.
  4. Toast buns, cut sides up, if desired. Serve beef mixture on buns with desired amount of Cilantro-Lime Coleslaw recipe.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • ½ cup mayonnaise
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 1 tsp honey

Side Dish Instructions

  1. Stir together coleslaw, mayonnaise, cilantro, lime juice, and honey in a large bowl; season with salt and pepper to taste.
