Chicken-Parmesan Pasta Skillet
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 Tbsp butter
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 (16-oz) pkg ziti pasta
- 2 (24-oz) jars tomato and basil pasta sauce
- 2 cups water
- 1 (8-oz) pkg shredded mozzarella cheese
- ½ cup shredded Parmesan cheese
- ½ cup panko breadcrumbs
- 2 Tbsp chopped fresh parsley
Instructions
- Season chicken lightly with salt and pepper. Melt butter in a large, deep broiler-safe skillet over medium heat; add chicken, onion, and garlic. Cook until chicken is browned, stirring occasionally.
- Stir in pasta, pasta sauce, and water; bring to a boil, cover, reduce heat, and simmer 12 minutes or until pasta is tender. Stir in mozzarella. Sprinkle with Parmesan and breadcrumbs.
- Preheat broiler. Transfer skillet to oven, and broil 2 to 3 minutes or until breadcrumbs are golden. Sprinkle with parsley.
