One-Dish Veggie Fried Rice

Ingredients

  • ½ cup long-grain white rice
  • ½ (16-oz) pkg frozen vegetable stir-fry mix
  • 1 Tbsp sesame oil (or use vegetable oil)
  • 2 green onions, cut into 2-inch pieces
  • 1 clove garlic, minced
  • ½ tsp ground ginger
  • 1 (15-oz) can baby corn, drained
  • 2 eggs, lightly beaten
  • ¼ cup soy sauce

Instructions

  1. Cook rice according to package directions; spread in a thin layer on a baking sheet, and set aside to cool.
  2. Cook vegetables according to package directions; drain.
  3. Heat oil in a large nonstick skillet over medium-high heat. Add onions, garlic, and ginger; sauté 1 minute.
  4. Stir in corn and rice; cook 2 minutes or until thoroughly heated.
  5. Push rice mixture to sides of pan, making a well in center. Add eggs; cook, stirring occasionally, 2 minutes or until set.
  6. Stir eggs into rice mixture; stir in soy sauce and vegetables. Serve with additional soy sauce, if desired.
