One-Dish Veggie Fried Rice

Ingredients
- ½ cup long-grain white rice
- ½ (16-oz) pkg frozen vegetable stir-fry mix
- 1 Tbsp sesame oil (or use vegetable oil)
- 2 green onions, cut into 2-inch pieces
- 1 clove garlic, minced
- ½ tsp ground ginger
- 1 (15-oz) can baby corn, drained
- 2 eggs, lightly beaten
- ¼ cup soy sauce
Instructions
- Cook rice according to package directions; spread in a thin layer on a baking sheet, and set aside to cool.
- Cook vegetables according to package directions; drain.
- Heat oil in a large nonstick skillet over medium-high heat. Add onions, garlic, and ginger; sauté 1 minute.
- Stir in corn and rice; cook 2 minutes or until thoroughly heated.
- Push rice mixture to sides of pan, making a well in center. Add eggs; cook, stirring occasionally, 2 minutes or until set.
- Stir eggs into rice mixture; stir in soy sauce and vegetables. Serve with additional soy sauce, if desired.
