Mixed Greens with Citrus Vinaigrette

Ingredients

  • ¼ cup extra virgin olive oil
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • 1 Tbsp honey, warmed
  • ¼ tsp crushed red pepper
  • 2 cloves garlic, minced
  • 1 (8-oz) block feta cheese

Instructions

  1. Whisk together oil, lemon zest, lemon juice, honey, red pepper, and garlic in a bowl.
  2. Combine marinade and cheese in a large zip-top plastic bag; seal and marinate 4 to 8 hours, turning once.
  3. Remove cheese from marinade; discard marinade. Cut cheese into 3 servings; serve over Mixed Greens with Citrus Vinaigrette recipe.

Side Dish Ingredients

  • ½ small orange
  • ½ lemon
  • 2 Tbsp extra virgin olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (5-oz) pkg mixed baby greens
  • ½ grapefruit, peeled and sectioned 
  • 6 Tbsp roasted salted pistachios, chopped

Side Dish Instructions

  1. Grate zest and squeeze juice from orange and lemon.
  2. Whisk together juices, oil, salt, and pepper in a bowl. Add greens, grapefruit, and nuts; toss.
