Marinated Feta Cheese
Mixed Greens with Citrus VinaigretteIngredients
- ¼ cup extra virgin olive oil
- 1 tsp lemon zest
- 2 Tbsp lemon juice
- 1 Tbsp honey, warmed
- ¼ tsp crushed red pepper
- 2 cloves garlic, minced
- 1 (8-oz) block feta cheese
Instructions
- Whisk together oil, lemon zest, lemon juice, honey, red pepper, and garlic in a bowl.
- Combine marinade and cheese in a large zip-top plastic bag; seal and marinate 4 to 8 hours, turning once.
- Remove cheese from marinade; discard marinade. Cut cheese into 3 servings; serve over Mixed Greens with Citrus Vinaigrette recipe.

- ½ small orange
- ½ lemon
- 2 Tbsp extra virgin olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (5-oz) pkg mixed baby greens
- ½ grapefruit, peeled and sectioned
- 6 Tbsp roasted salted pistachios, chopped
Side Dish Instructions
- Grate zest and squeeze juice from orange and lemon.
- Whisk together juices, oil, salt, and pepper in a bowl. Add greens, grapefruit, and nuts; toss.
