Oven-Baked Shrimp Scampi
Spaghetti and Herbed Asparagus

Ingredients
- 1 lemon
- 2 lb peeled and deveined, large raw shrimp
- 3 cloves garlic, minced
- ⅓ cup butter, melted and divided
- 2 Tbsp white wine (or use low-sodium chicken broth)
- ½ tsp salt
- ½ tsp pepper
- ½ cup panko breadcrumbs
- ¼ cup freshly grated Parmesan cheese
- 6 Tbsp chopped fresh parsley, divided
Instructions
- Preheat oven to 425°F. Grate zest and squeeze juice from lemon.
- Combine lemon juice, shrimp, garlic, 2 Tbsp melted butter, wine, salt, and pepper in a bowl, tossing to coat shrimp.
- Combine panko, cheese, remaining butter, 3 Tbsp parsley, and lemon zest in a second bowl. Dredge shrimp in panko mixture, pressing gently to adhere. Place on a greased wire rack on a rimmed baking sheet.
- Bake 8 to 10 minutes or until shrimp turn pink. Remove from oven.
- Increase oven temperature to broil. Broil shrimp 2 minutes or until lightly browned. Sprinkle with 3 Tbsp parsley.

- 1½ lb asparagus, trimmed
- 2 Tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Cook pasta according to package directions.
- Meanwhile, toss together asparagus, oil, seasoning, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 10 to 15 minutes or until crisp-tender.
