Brussels Sprouts and Bacon Hash

Ingredients

  • 8 slices center cut bacon
  • 1 (26-oz) pkg frozen shredded hash browns
  • ¾ tsp salt, divided
  • 2 Tbsp olive oil
  • 2 (12-oz) pkg Brussels sprouts, shredded (or halved)
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp pepper
  • 3 green onions, thinly sliced
  • 3 avocados, sliced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Remove from skillet, reserving drippings.
  2. Meanwhile, cook hash browns and ½ tsp salt in hot oil in another large skillet over medium-high heat, covered, 10 minutes or until browned, stirring occasionally.
  3. Add Brussels sprouts, red onion, garlic, pepper, and ¼ tsp salt to drippings in skillet; cook 7 to 9 minutes or until browned and tender. Stir in hash browns. Sprinkle with green onions and bacon; top with avocados.
