Banana Cake with Cinnamon-Cream Cheese Frosting

Ingredients

  • 1 cup mashed banana
  • ½ cup vegetable oil
  • ⅓ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp ground cinnamon, divided
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ cup plain Greek yogurt
  • 1 cup milk
  • ½ (8-oz) block cream cheese, softened
  • ¼ cup butter, softened
  • 1½ cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Coat an 8-inch square baking dish with cooking spray.
  2. Combine banana and oil in a large bowl. Beat at medium speed with an electric mixer until blended. Add both sugars; beat well.
  3. Add egg and vanilla; beat until blended. Add flour, ½ tsp cinnamon, baking powder, and baking soda; beat until just blended. Add yogurt and milk; beat until blended. Pour batter into prepared dish.
  4. Bake 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 5 minutes; invert onto a wire rack, and cool completely.
  5. Beat cream cheese and butter at medium speed until smooth. Add ½ tsp cinnamon and powdered sugar; beat until well blended. Spread frosting on cooled cake. Cut into squares.
