Grilled Agave-Lime Chicken
Mexican Street Corn Succotash
Ingredients
- 3 limes
- 3 Tbsp olive oil
- 2 Tbsp agave syrup (or use maple syrup)
- ¾ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- 2 lb boneless, skinless chicken thighs (or use boneless, skinless chicken breasts or pork chops)
- ¼ cup finely chopped fresh cilantro
Instructions
- Preheat grill or grill pan to medium-high heat. Grate zest and squeeze juice from limes. Combine lime zest, lime juice, oil, agave, salt, pepper, and garlic powder; brush half of mixture on chicken.
- Grill chicken, covered, 6 minutes per side or until done, brushing with remaining lime mixture during cooking. Sprinkle with cilantro.
Side Dish Ingredients
- 1 (12-oz) pkg frozen whole kernel corn, thawed
- 1½ cups frozen seasoning blend (diced onion, bell peppers and celery)
- 2 Tbsp olive oil
- 1 (15-oz) can black beans, drained and rinsed
- 3 Tbsp mayonnaise
- 2 Tbsp lime juice
- 2 tsp chili powder
- ¼ tsp pepper
- ¾ cup crumbled cotija cheese (or use feta cheese)
Side Dish Instructions
- Cook corn and seasoning blend in hot oil in a large cast-iron skillet over medium-high heat 8 minutes or until browned. Add beans; cook 5 minutes or until thoroughly heated.
- Stir in mayonnaise, lime juice, chili powder, and pepper. Sprinkle with cheese.
