Hawaiian Pork Roast

Ingredients

  • 3 lb boneless pork loin roast (or use boneless chuck roast)
  • 2 Tbsp almond flour
  • 1 tsp salt
  • ½ tsp pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups cubed pineapple
  • 1 (8-oz) can tomato sauce
  • 2 Tbsp fresh orange juice
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Sprinkle pork with flour, salt, and pepper; transfer to a 5- or 6-quart slow cooker. Add onion, garlic, pineapple, tomato sauce, orange juice, and thyme. Cover and cook on LOW 8 hours or until pork is tender.

Side Dish Ingredients

  • 2 lb broccoli, cut into florets
  • 2 red bell peppers, cut into 1-inch pieces
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 Tbsp avocado oil
  • 1 tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 475°F. Combine all ingredients; spread in a single layer on two rimmed baking sheets. Bake 14 minutes without stirring.
