Hawaiian Pork Roast
Roasted Broccoli, Bell Pepper, and OnionIngredients
- 3 lb boneless pork loin roast (or use boneless chuck roast)
- 2 Tbsp almond flour
- 1 tsp salt
- ½ tsp pepper
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups cubed pineapple
- 1 (8-oz) can tomato sauce
- 2 Tbsp fresh orange juice
- 1 Tbsp chopped fresh thyme
Instructions
- Sprinkle pork with flour, salt, and pepper; transfer to a 5- or 6-quart slow cooker. Add onion, garlic, pineapple, tomato sauce, orange juice, and thyme. Cover and cook on LOW 8 hours or until pork is tender.

- 2 lb broccoli, cut into florets
- 2 red bell peppers, cut into 1-inch pieces
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 Tbsp avocado oil
- 1 tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 475°F. Combine all ingredients; spread in a single layer on two rimmed baking sheets. Bake 14 minutes without stirring.
