Chipotle Turkey Meatballs

Ingredients
- 1½ lb lean ground turkey
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 2 Tbsp olive oil
- 1 onion, chopped
- 1 (28-oz) can no-salt-added crushed tomatoes
- 2 to 3 chipotle peppers in adobo sauce, finely chopped
- 1 tsp smoked paprika
Instructions
- Combine turkey, garlic, cumin, and ½ tsp each salt and pepper; shape into 1-inch balls.
- Cook meatballs in hot oil in a large, deep nonstick skillet over medium heat 4 minutes or until browned and no longer pink in centers, stirring often. Remove from heat; keep warm.
- Add onion to skillet; sauté 5 minutes or until tender. Add remaining ingredients; bring to a boil, and simmer 15 minutes or until slightly thickened.
- Add meatballs; cover and simmer 5 minutes or until thoroughly heated.
Side Dish Ingredients
- 1 cup brown basmati rice
- ¼ cup chopped fresh flat-leaf parsley
- 1½ lb green beans, trimmed
- 2 Tbsp butter
Side Dish Instructions
- Cook rice according to package directions; stir in parsley.
- Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until crisp-tender. Transfer to a bowl; stir in butter.
