Chipotle Turkey Meatballs

Ingredients

  • 1½ lb lean ground turkey
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 (28-oz) can no-salt-added crushed tomatoes
  • 2 to 3 chipotle peppers in adobo sauce, finely chopped
  • 1 tsp smoked paprika

Instructions

  1. Combine turkey, garlic, cumin, and ½ tsp each salt and pepper; shape into 1-inch balls.
  2. Cook meatballs in hot oil in a large, deep nonstick skillet over medium heat 4 minutes or until browned and no longer pink in centers, stirring often. Remove from heat; keep warm.
  3. Add onion to skillet; sauté 5 minutes or until tender. Add remaining ingredients; bring to a boil, and simmer 15 minutes or until slightly thickened.
  4. Add meatballs; cover and simmer 5 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 cup brown basmati rice
  • ¼ cup chopped fresh flat-leaf parsley
  • 1½ lb green beans, trimmed
  • 2 Tbsp butter

Side Dish Instructions

  1. Cook rice according to package directions; stir in parsley.
  2. Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until crisp-tender. Transfer to a bowl; stir in butter.
