Potato and Lentil Curry
Warmed Whole-Wheat Naan
Ingredients
- 7 cups water, divided
- 2 cups lentils
- 1 cup chopped onion
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 2 tsp curry powder
- 1 tsp ground cumin
- 5 red potatoes, cut into small cubes
- ¼ cup chopped green onions
Instructions
- Bring 5 cups salted water and lentils to a boil in a large saucepan. Reduce heat; simmer 20 to 25 minutes or until almost tender; drain.
- Sauté onion in hot oil in a large skillet over medium heat 5 minutes or until slightly browned. Add garlic, curry powder, and cumin; stir 1 minute.
- Add potatoes, lentils, and 2 cups water. Bring to a boil. Reduce heat, cover, and simmer 10 minutes or until potatoes are tender. Sprinkle with green onions.

- 2 (4.4-oz) pieces whole grain naan
Side Dish Instructions
- Wrap naan pieces in damp paper towels.
- Microwave on HIGH 20 seconds; cut in wedges, and serve warm.
