Potato and Lentil Curry

Ingredients

  • 7 cups water, divided 
  • 2 cups lentils
  • 1 cup chopped onion
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 5 red potatoes, cut into small cubes
  • ¼ cup chopped green onions

Instructions

  1. Bring 5 cups salted water and lentils to a boil in a large saucepan. Reduce heat; simmer 20 to 25 minutes or until almost tender; drain.
  2. Sauté onion in hot oil in a large skillet over medium heat 5 minutes or until slightly browned. Add garlic, curry powder, and cumin; stir 1 minute.
  3. Add potatoes, lentils, and 2 cups water. Bring to a boil. Reduce heat, cover, and simmer 10 minutes or until potatoes are tender. Sprinkle with green onions.

Side Dish Ingredients

  • 2 (4.4-oz) pieces whole grain naan

Side Dish Instructions

  1. Wrap naan pieces in damp paper towels.
  2. Microwave on HIGH 20 seconds; cut in wedges, and serve warm.
