Ingredients
- 1 bunch radishes, halved
- 2 (12-oz) pkg asparagus tips
- 2 Tbsp minced garlic
- 5 Tbsp olive oil, divided
- ½ tsp salt
- ½ tsp pepper
- 2 (8.5-oz) pouches microwavable seven-whole-grains mix
- 1 (10-oz) pkg frozen green peas
- 2 Tbsp refrigerated dill paste (or use parsley or basil paste)
- 2 (15-oz) cans cannellini beans, drained and rinsed
Instructions
- Preheat oven to 475°F. Toss together radishes, asparagus, garlic, 1 Tbsp oil, salt, and pepper on a large rimmed baking sheet; spread in a single layer. Bake 15 to 18 minutes or until vegetables begin to brown.
- Meanwhile, microwave grains and peas according to package directions.
- Whisk together ¼ cup oil and dill paste in a large bowl. Add beans, grains, and vegetables; toss.
