Edamame-Bok Choy Salad
Ingredients
- 1 (12-oz) pkg frozen shelled edamame
- 2 lb baby bok choy, sliced
- 2 cups sliced red cabbage
- 1 (10-oz) pkg matchstick-cut carrots
- ½ cup chopped fresh cilantro
- 1 cup sesame-ginger dressing
- 1 cup chopped roasted, salted peanuts
Instructions
- Cook edamame according to package directions.
- Place edamame, bok choy, cabbage, carrots, and cilantro in a large bowl; add dressing, and toss. Sprinkle with nuts.
