Italian Chicken Sausages, Apples, and Onions

Ingredients
- 2 (12-oz) pkg fully cooked Italian chicken sausage links, cut into ½-inch-thick slices
- 2 onions, sliced
- 1 green bell pepper, sliced
- 1 Tbsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 Gala apples, sliced
Instructions
- Cook sausages in a Dutch oven coated with cooking spray over medium-high heat 5 to 6 minutes or until browned. Remove from pot, reserving drippings in pot.
- Add onions, bell pepper, seasoning, salt, and pepper to hot drippings. Reduce heat to medium; cook 5 to 7 minutes or until onion is very tender, stirring constantly.
- Add apples; cook 3 minutes or until tender. Return sausages to pot; cook 2 to 3 minutes or until thoroughly heated.
Side Dish Ingredients
- 1 (10-oz) pkg baby spinach
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- ¼ tsp salt
Side Dish Instructions
- Cook spinach and garlic in hot oil in a large skillet over medium heat 6 minutes or until spinach wilts, stirring often. Stir in vinegar and salt.
