Grilled Dry-Rub Chicken Thighs
Cheddar "Grits" and Roasted Asparagus
Ingredients
- 1 Tbsp smoked paprika
- ½ Tbsp onion powder
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp ground cumin
- ½ tsp pepper
- ½ tsp kosher salt
- 1 lb bone-in chicken thighs
- 1½ Tbsp olive oil
Instructions
- Combine paprika, onion powder, garlic powder, oregano, cumin, pepper, and salt in a small bowl. Rub mixture all over chicken thighs. Let stand 20 minutes at room temperature.
- Preheat grill to medium heat. Place chicken on a grill rack rubbed with olive oil. Grill, covered, 30 to 35 minutes or until done, turning occasionally.

- ½ lb asparagus, trimmed
- 1½ Tbsp olive oil
- ½ tsp kosher salt, divided
- ¼ tsp garlic powder
- 1 (12-oz) pkg frozen riced cauliflower
- ¼ cup shredded Cheddar cheese
Side Dish Instructions
- Preheat oven to 425°F. Toss together asparagus, oil, ¼ tsp salt, and garlic powder. Arrange on a rimmed baking sheet. Bake 8 minutes or until tender.
- Cook cauliflower according to package directions. Stir in cheese and ¼ tsp salt.
