Grilled Dry-Rub Chicken Thighs

Cheddar "Grits" and Roasted Asparagus

Ingredients

  • 1 Tbsp smoked paprika
  • ½ Tbsp onion powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp pepper
  • ½ tsp kosher salt
  • 1 lb bone-in chicken thighs
  • 1½ Tbsp olive oil

Instructions

  1. Combine paprika, onion powder, garlic powder, oregano, cumin, pepper, and salt in a small bowl. Rub mixture all over chicken thighs. Let stand 20 minutes at room temperature.
  2. Preheat grill to medium heat. Place chicken on a grill rack rubbed with olive oil. Grill, covered, 30 to 35 minutes or until done, turning occasionally.

Side Dish Ingredients

  • ½ lb asparagus, trimmed
  • 1½ Tbsp olive oil
  • ½ tsp kosher salt, divided
  • ¼ tsp garlic powder
  • 1 (12-oz) pkg frozen riced cauliflower
  • ¼ cup shredded Cheddar cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together asparagus, oil, ¼ tsp salt, and garlic powder. Arrange on a rimmed baking sheet. Bake 8 minutes or until tender.
  2. Cook cauliflower according to package directions. Stir in cheese and ¼ tsp salt.
