Maple-Barbecue Pork Tenderloin

Ingredients

  • 1½ tsp olive oil
  • 1 pork tenderloin (1 lb) 
  • 1½ Tbsp mesquite seasoning (see Note)
  • ¼ cup barbecue sauce
  • 1½ tsp maple syrup (or use honey)
  • 2 small cloves garlic, minced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Drizzle oil over pork; rub with mesquite seasoning.
  2. Combine barbecue sauce, syrup, and garlic.
  3. Grill pork 12 to 15 minutes or until a meat thermometer inserted into center reads 145°F, turning occasionally and brushing with barbecue sauce mixture during last 4 minutes of cooking.

  • 1 (12-oz) pkg green beans 
  • ½ red bell pepper, sliced
  • 1 Tbsp olive oil 
  • 1½ tsp grainy Dijon mustard
  • ½ tsp dried dill
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté green beans and bell pepper in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until tender. Toss with mustard, dill, salt, and pepper.
