Cheesy Green Chile Skillet

Ingredients

  • ½ (16.2-oz) pkg frozen veggie crumbles 
  • 1 green bell pepper, chopped
  • ¾ cup chopped onion
  • 1 small jalapeño pepper, minced (see Note)
  • 1 Tbsp olive oil
  • ½ (10-oz) pkg frozen riced cauliflower 
  • ⅓ cup milk
  • 1½ oz cream cheese 
  • ½ (4-oz) can green chiles, undrained
  • 1 cup shredded Mexican blend cheese, divided
  • ¼ tsp ground cumin
  • 2 Tbsp chopped fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. Cook crumbles, bell pepper, onion, and jalapeño pepper in hot oil a large skillet 10 to 12 minutes or until crumbles are thoroughly heated and vegetables are tender. Add cauliflower; cover, and cook 6 minutes, stirring occasionally.
  2. Stir in milk, cream cheese, chiles, ½ cup cheese, and cumin; top with ½ cup cheese. Reduce heat; cover, and simmer 10 minutes. Serve with cilantro and lime wedges, if desired.
