Cheesy Green Chile Skillet

Ingredients
- ½ (16.2-oz) pkg frozen veggie crumbles
- 1 green bell pepper, chopped
- ¾ cup chopped onion
- 1 small jalapeño pepper, minced (see Note)
- 1 Tbsp olive oil
- ½ (10-oz) pkg frozen riced cauliflower
- ⅓ cup milk
- 1½ oz cream cheese
- ½ (4-oz) can green chiles, undrained
- 1 cup shredded Mexican blend cheese, divided
- ¼ tsp ground cumin
- 2 Tbsp chopped fresh cilantro (optional)
- Lime wedges (optional)
Instructions
- Cook crumbles, bell pepper, onion, and jalapeño pepper in hot oil a large skillet 10 to 12 minutes or until crumbles are thoroughly heated and vegetables are tender. Add cauliflower; cover, and cook 6 minutes, stirring occasionally.
- Stir in milk, cream cheese, chiles, ½ cup cheese, and cumin; top with ½ cup cheese. Reduce heat; cover, and simmer 10 minutes. Serve with cilantro and lime wedges, if desired.
