Ingredients

  • 2 lb ground chicken (or use ground turkey)
  • 1 (12-oz) pkg frozen peas and carrots
  • 1 onion, chopped
  • ½ tsp dried crushed rosemary
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 2 Tbsp all-purpose flour

Instructions

  1. Cook chicken, peas, carrots, onion, rosemary, salt, and pepper in hot oil in a large skillet over medium-high heat 10 to 12 minutes or until browned.
  2. Whisk together broth and flour; add to skillet. Cook 6 to 8 minutes or until thickened. Serve chicken mixture over Rosemary Mashed Potatoes recipe.

Side Dish Ingredients

  • 2 lb small red potatoes
  • 1½ cups sour cream
  • 1½ tsp dried crushed rosemary
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan. Cook 12 to 14 minutes or until tender; drain well, and return to pan.
  2. Add sour cream, rosemary, salt, and pepper to potatoes; mash with a potato masher to desired smoothness.
