Kimchi Grilled Cheese

Ingredients

  • 12 slices sharp Cheddar cheese
  • 1½ cups kimchi, drained
  • 12 slices bread
  • 3 Tbsp olive oil

Instructions

  1. Divide 6 cheese slices and kimchi among 6 bread slices; top with 6 cheese slices and remaining bread slices. Cook sandwiches, in batches, in 1 Tbsp hot oil per batch 3 to 4 minutes per side or until browned.

Side Dish Ingredients

  • 2 (12-oz) pkg vegetable stir-fry medley
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp sesame oil
  • 3 Tbsp sesame seeds

Side Dish Instructions

  1. Cook vegetables and soy sauce in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until browned. Stir in sesame seeds.
