Baked Greek Chicken with Orzo
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 3 Tbsp olive oil, divided
- 2 tsp Greek seasoning, divided
- 6 carrots, cut into chunks
- 2 zucchini, cut into chunks
- 1 pint grape tomatoes
- 1½ cups orzo (preferably whole wheat)
Instructions
- Preheat oven to 350°F. Drizzle chicken with 1 Tbsp oil and sprinkle with 1 tsp seasoning on a greased pan. Toss carrots, zucchini, and tomatoes with 2 Tbsp oil and 1 tsp seasoning.
- Arrange vegetables around chicken on pan. Bake 25 to 30 minutes or until chicken is done and vegetables are tender.
- Meanwhile, cook orzo according to package directions. Serve chicken and vegetables on orzo.
