Baked Greek Chicken with Orzo

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil, divided
  • 2 tsp Greek seasoning, divided
  • 6 carrots, cut into chunks
  • 2 zucchini, cut into chunks
  • 1 pint grape tomatoes
  • 1½ cups orzo (preferably whole wheat)

Instructions

  1. Preheat oven to 350°F. Drizzle chicken with 1 Tbsp oil and sprinkle with 1 tsp seasoning on a greased pan. Toss carrots, zucchini, and tomatoes with 2 Tbsp oil and 1 tsp seasoning.
  2. Arrange vegetables around chicken on pan. Bake 25 to 30 minutes or until chicken is done and vegetables are tender.
  3. Meanwhile, cook orzo according to package directions. Serve chicken and vegetables on orzo.
