Lemon Pork Chops

Tomato-Feta Couscous and Steamed Green Beans

Ingredients

  • 1½ lb thin-sliced pork chops
  • ½ cup all-purpose flour
  • ¼ cup vegetable oil, divided
  • ¾ cup chicken broth
  • ¼ cup lemon juice

Instructions

  1. Lightly season pork with salt and pepper. Dredge pork in flour, shaking off excess.
  2. Cook pork, in batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat, 3 minutes per side or to desired doneness; remove from skillet.
  3. Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork chops.

Side Dish Ingredients

  • 1 (10-oz) pkg plain couscous
  • 3 Roma tomatoes, chopped
  • 1 (4-oz) pkg crumbled feta cheese
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Prepare couscous according to package directions. Add tomatoes and feta; toss. Season to taste.
  2. Steam green beans according to package directions. Season to taste with salt and pepper.
