Lemon Pork Chops
Tomato-Feta Couscous and Steamed Green BeansIngredients
- 1½ lb thin-sliced pork chops
- ½ cup all-purpose flour
- ¼ cup vegetable oil, divided
- ¾ cup chicken broth
- ¼ cup lemon juice
Instructions
- Lightly season pork with salt and pepper. Dredge pork in flour, shaking off excess.
- Cook pork, in batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat, 3 minutes per side or to desired doneness; remove from skillet.
- Add broth and lemon juice to skillet; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Spoon over pork chops.

- 1 (10-oz) pkg plain couscous
- 3 Roma tomatoes, chopped
- 1 (4-oz) pkg crumbled feta cheese
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Prepare couscous according to package directions. Add tomatoes and feta; toss. Season to taste.
- Steam green beans according to package directions. Season to taste with salt and pepper.
