Cajun Pork and Rice

Ingredients

  • 2 (1-lb) Creole-flavored pork tenderloins
  • 2 Tbsp olive oil
  • 1 (12-oz) pkg dirty rice mix
  • 1 pint grape tomatoes, halved
  • 2 (7.5-oz) pkg frozen green beans with almonds

Instructions

  1. Preheat oven to 425°F. Cook pork in hot oil in a large cast-iron skillet over medium-high heat 3 minutes per side or until browned. Transfer skillet to oven, and bake 10 minutes. Let stand 5 minutes before slicing.
  2. Meanwhile, cook rice according to package directions; stir in tomatoes.
  3. Steam green beans according to package directions.
