Pesto-Tomato Tilapia

Ingredients

  • 6 (6-oz) tilapia fillets (or use any lean white fish)
  • ¾ cup pesto
  • 2 Roma tomatoes, thinly sliced
  • 1 Tbsp butter
  • 1 cup whole wheat panko breadcrumbs

Instructions

  1. Preheat oven to 450°F. Place fish on a parchment paper-lined rimmed baking sheet; sprinkle lightly with salt and pepper. Spread pesto over fish; top with tomato slices. Bake 8 to 10 minutes or until fish flakes with a fork.
  2. Meanwhile, melt butter in a skillet over medium-high heat. Add panko; cook, stirring, 3 minutes or until lightly browned. Season with salt and pepper to taste. Serve fish sprinkled with panko.

  • 2 cups orzo
  • 2 Tbsp butter, divided
  • ¼ cup freshly grated Parmesan cheese
  • 2 Tbsp lemon juice
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook orzo according to package directions; drain, and toss with 1 Tbsp butter, cheese, lemon juice, and salt and pepper to taste.
  2. Meanwhile, cook broccoli according to package directions; toss with 1 Tbsp butter and salt and pepper to taste.
