Pesto-Tomato Tilapia

Ingredients
- 6 (6-oz) tilapia fillets (or use any lean white fish)
- ¾ cup pesto
- 2 Roma tomatoes, thinly sliced
- 1 Tbsp butter
- 1 cup whole wheat panko breadcrumbs
Instructions
- Preheat oven to 450°F. Place fish on a parchment paper-lined rimmed baking sheet; sprinkle lightly with salt and pepper. Spread pesto over fish; top with tomato slices. Bake 8 to 10 minutes or until fish flakes with a fork.
- Meanwhile, melt butter in a skillet over medium-high heat. Add panko; cook, stirring, 3 minutes or until lightly browned. Season with salt and pepper to taste. Serve fish sprinkled with panko.

- 2 (12-oz) pkg broccoli florets

- Meanwhile, cook broccoli according to package directions; toss with 1 Tbsp butter and salt and pepper to taste.
