Ingredients
- ¾ cup chopped walnuts
- 2 cups plain couscous
- ½ cup olive oil vinaigrette
- 1 (5-oz) pkg arugula
- 1 cup thinly sliced red onion
- 3 Tbsp chopped fresh mint
- 3 oranges, peeled and sectioned
Instructions
- Toast nuts in a dry skillet over low heat until fragrant.
- Meanwhile, cook couscous according to package directions. Toss with vinaigrette and salt and pepper to taste. Let stand 10 minutes.
- Add arugula, onion, mint, and oranges; toss. Sprinkle with nuts.
