Ingredients

  • ¾ cup chopped walnuts
  • 2 cups plain couscous
  • ½ cup olive oil vinaigrette
  • 1 (5-oz) pkg arugula
  • 1 cup thinly sliced red onion
  • 3 Tbsp chopped fresh mint
  • 3 oranges, peeled and sectioned

Instructions

  1. Toast nuts in a dry skillet over low heat until fragrant.
  2. Meanwhile, cook couscous according to package directions. Toss with vinaigrette and salt and pepper to taste. Let stand 10 minutes.
  3. Add arugula, onion, mint, and oranges; toss. Sprinkle with nuts.
