Ingredients

  • 6 (0.63-oz) tostada shells (see Note)
  • 2½ cups shredded rotisserie chicken
  • 1 Tbsp taco seasoning mix 
  • 2 Tbsp lime juice
  • 1 (16-oz) pkg tricolor coleslaw
  • ⅓ cup cilantro-lime vinaigrette
  • 1 cup refrigerated mild white cheese dip (see Note)
  • 6 Tbsp guacamole
  • ½ cup crumbled cotija cheese
  • ¼ cup roasted, salted pepitas (pumpkin seeds)
  • Lime wedges (optional)

Instructions

  1. Preheat oven to 400°F. Place tostada shells on a baking sheet. Bake 5 to 8 minutes or until thoroughly heated and lightly toasted.
  2. Meanwhile, combine chicken and taco seasoning in a microwave-safe bowl. Microwave at HIGH 30 seconds or until thoroughly heated. Toss with lime juice.
  3. Combine slaw and vinaigrette in a bowl.
  4. Heat cheese dip according to package directions. Spread guacamole on shells; top with chicken. Drizzle with cheese dip, and top with slaw, cotija, and pepitas. Serve with lime wedges, if desired.
