Homemade Chicken Nuggets
Buttery Corn and Natural ApplesauceIngredients
- 2 lb boneless, skinless chicken breasts, cut into bite-size pieces
- 2 eggs, lightly beaten
- 1 cup panko breadcrumbs
- 2 tsp Italian seasoning
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Coat a baking sheet with cooking spray.
- Place chicken in a bowl, and season lightly with salt and pepper. Add beaten eggs, and toss.
- Combine breadcrumbs, Italian seasoning, and Parmesan in a shallow bowl; mix well.
- Coat chicken in breadcrumb mixture, a few pieces at a time, pressing to adhere. Arrange chicken on baking sheet. Spray generously with cooking spray.
- Bake 10 minutes; turn and bake 10 minutes longer or until golden brown and done.
Side Dish Ingredients
- 1 (16-oz) pkg frozen corn (or use fresh corn)
- 2 Tbsp butter
- 1 (24-oz) jar unsweetened applesauce, chilled
Side Dish Instructions
- Cook corn according to package directions. Add butter; season with salt and pepper to taste.
- Serve corn and applesauce on each plate.
