Homemade Chicken Nuggets

Buttery Corn and Natural Applesauce

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 2 tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Coat a baking sheet with cooking spray.
  2. Place chicken in a bowl, and season lightly with salt and pepper. Add beaten eggs, and toss.
  3. Combine breadcrumbs, Italian seasoning, and Parmesan in a shallow bowl; mix well.
  4. Coat chicken in breadcrumb mixture, a few pieces at a time, pressing to adhere. Arrange chicken on baking sheet. Spray generously with cooking spray.
  5. Bake 10 minutes; turn and bake 10 minutes longer or until golden brown and done.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen corn (or use fresh corn)
  • 2 Tbsp butter
  • 1 (24-oz) jar unsweetened applesauce, chilled

Side Dish Instructions

  1. Cook corn according to package directions. Add butter; season with salt and pepper to taste.
  2. Serve corn and applesauce on each plate.
