Apple and Cheddar Grilled Cheese

Ingredients

  • 1 Tbsp yellow mustard (or use Dijon mustard)
  • 3 Tbsp mayonnaise
  • 12 slices sandwich bread
  • 2 cups shredded Cheddar cheese
  • 1 large apple, peeled, cored and thinly sliced (or shred the apple)
  • 2 Tbsp butter

Instructions

  1. Combine mustard and mayonnaise in a bowl; spread on bread slices.
  2. Sprinkle cheese over mayo on 6 bread slices. Arrange apple slices on cheese; top with 6 bread slices.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Place 3 sandwiches in skillet; cook 2 to 3 minutes per side or until golden brown and cheese melts. Repeat procedure with 1 Tbsp butter and 3 sandwiches. Cut sandwiches in half.

Side Dish Ingredients

  • 1 (12-oz) pkg salad greens
  • ½ cup Ranch dressing
  • ½ (5-oz) pkg croutons
  • ¼ cup sunflower seeds
  • 6 fruit cups

Side Dish Instructions

  1. Toss salad with dressing, croutons, and sunflower seeds. Serve with fruit cups on each plate.
