Honey Butter Pork

Ingredients

  • 2 pork tenderloins (2 lb)
  • 2 tsp Cajun seasoning
  • ½ tsp salt
  • 2 Tbsp olive oil
  • 6 Tbsp butter
  • 3 Tbsp honey

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with Cajun seasoning and salt.
  2. Cook pork in hot oil in a large ovenproof skillet 5 minutes per side or until browned. Transfer skillet to oven.
  3. Bake 15 to 20 minutes or until a meat thermometer inserted reads at least 145°F. Remove pork from skillet; let stand 5 minutes before thinly slicing. Cut into bite-size pieces, if desired.
  4. Meanwhile, melt butter with honey in same skillet over medium heat. Drizzle sauce over pork.

Side Dish Ingredients

  • 1½ lb red potatoes, cut into 1½-inch pieces
  • 6 Tbsp butter
  • ¾ cup milk
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 (16-oz) pkg frozen petite green peas

Side Dish Instructions

  1. Place potatoes in a stockpot; cover with water. Bring water to a boil over medium-high heat. Cook 20 minutes or until potatoes are fork tender; drain well, and return to pot.
  2. Add butter, milk, salt, and pepper to potatoes; mash.
  3. Cook peas according to package directions; season with salt and pepper to taste.
