Honey Butter Pork
Mashed Potatoes and Petite Peas
Ingredients
- 2 pork tenderloins (2 lb)
- 2 tsp Cajun seasoning
- ½ tsp salt
- 2 Tbsp olive oil
- 6 Tbsp butter
- 3 Tbsp honey
Instructions
- Preheat oven to 400°F. Sprinkle pork with Cajun seasoning and salt.
- Cook pork in hot oil in a large ovenproof skillet 5 minutes per side or until browned. Transfer skillet to oven.
- Bake 15 to 20 minutes or until a meat thermometer inserted reads at least 145°F. Remove pork from skillet; let stand 5 minutes before thinly slicing. Cut into bite-size pieces, if desired.
- Meanwhile, melt butter with honey in same skillet over medium heat. Drizzle sauce over pork.

- 1½ lb red potatoes, cut into 1½-inch pieces
- 6 Tbsp butter
- ¾ cup milk
- 1 tsp salt
- ¼ tsp pepper
- 1 (16-oz) pkg frozen petite green peas
Side Dish Instructions
- Place potatoes in a stockpot; cover with water. Bring water to a boil over medium-high heat. Cook 20 minutes or until potatoes are fork tender; drain well, and return to pot.
- Add butter, milk, salt, and pepper to potatoes; mash.
- Cook peas according to package directions; season with salt and pepper to taste.
