Broiled Grouper

Easy Broccoli Packets and Ginger Rice

Ingredients

  • ½ lb grouper fillets (1-inch thick), rinsed and patted dry
  • 1 Tbsp canola oil, divided
  • 1 tsp balsamic vinegar
  • ½ cup chopped strawberries
  • 2 Tbsp chopped fresh cilantro
  • ½ cup grape tomatoes, quartered
  • 1 jalapeño pepper, seeded and finely chopped

Instructions

  1. Preheat broiler. Arrange fish on a foil-lined baking sheet; rub 1½ tsp oil over top of fish, and sprinkle with ⅛ tsp each salt and pepper.
  2. Broil on second oven shelf 8 minutes or until fish flakes with a fork.
  3. Meanwhile, toss together remaining 1½ tsp oil, vinegar and remaining ingredients. Spoon fruit salsa over each fillet.

Side Dish Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 tsp extra virgin olive oil
  • ½ tsp dried oregano
  • ¼ tsp salt, divided
  • ⅓ cup instant brown rice
  • ½ tsp grated ginger

Side Dish Instructions

  1. Preheat broiler. Spread broccoli florets on a large piece of foil. Drizzle with oil, and sprinkle with oregano and ⅛ tsp salt. Toss to coat, and seal packet tightly.
  2. Broil 15 minutes or until broccoli is crisp-tender.
  3. Meanwhile, cook rice according to package directions; toss with ginger and ⅛ tsp salt.
