Broiled Grouper
Easy Broccoli Packets and Ginger RiceIngredients
- ½ lb grouper fillets (1-inch thick), rinsed and patted dry
- 1 Tbsp canola oil, divided
- 1 tsp balsamic vinegar
- ½ cup chopped strawberries
- 2 Tbsp chopped fresh cilantro
- ½ cup grape tomatoes, quartered
- 1 jalapeño pepper, seeded and finely chopped
Instructions
- Preheat broiler. Arrange fish on a foil-lined baking sheet; rub 1½ tsp oil over top of fish, and sprinkle with ⅛ tsp each salt and pepper.
- Broil on second oven shelf 8 minutes or until fish flakes with a fork.
- Meanwhile, toss together remaining 1½ tsp oil, vinegar and remaining ingredients. Spoon fruit salsa over each fillet.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 tsp extra virgin olive oil
- ½ tsp dried oregano
- ¼ tsp salt, divided
- ⅓ cup instant brown rice
- ½ tsp grated ginger
Side Dish Instructions
- Preheat broiler. Spread broccoli florets on a large piece of foil. Drizzle with oil, and sprinkle with oregano and ⅛ tsp salt. Toss to coat, and seal packet tightly.
- Broil 15 minutes or until broccoli is crisp-tender.
- Meanwhile, cook rice according to package directions; toss with ginger and ⅛ tsp salt.
