Italian Sausage and Peppers

Ingredients

  • 1 (19.76-oz) pkg Italian sausage links
  • 2 green bell peppers, cut into strips
  • 1 onion, thinly sliced
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 3 Tbsp chicken broth
  • 2 Roma tomatoes, coarsely chopped
  • ½ tsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Cook sausage in a Dutch oven over medium heat until browned all over. Remove from pot, and slice sausage. Return to pot.
  2. Stir in remaining ingredients. Cover and cook 30 minutes or until vegetables are tender. Serve with a slotted spoon.

Side Dish Ingredients

  • 6 cups chopped romaine lettuce
  • ⅔ of a cucumber, chopped
  • ½ red onion, chopped
  • ⅔ cup Ranch dressing

Side Dish Instructions

  1. Combine lettuce, cucumber, and onion; top with dressing.
