Ranch Parmesan Chicken

Ingredients

  • ½ cup almond flour
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp pepper
  • 1 tsp garlic salt
  • 6 Tbsp Ranch dressing
  • 2 Tbsp water
  • 1½ lb boneless, skinless chicken breasts
  • ¼ cup butter, melted

Instructions

  1. Preheat oven to 400°F. Mix together almond flour, cheese, pepper, and garlic salt in a shallow bowl.
  2. Stir together Ranch and water in another shallow bowl. Dip chicken in Ranch, coating both sides. Coat in flour mixture, pressing gently to adhere.
  3. Place chicken in a lightly greased 13-x 9-inch baking dish. Drizzle with butter.
  4. Bake, uncovered, 20 to 25 minutes or until chicken is done.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 2 Tbsp olive oil
  • ½ cup garlic-herb spreadable cheese

Side Dish Instructions

  1. Cook spinach in hot oil in a large nonstick skillet over medium heat 2 minutes or until thoroughly heated, stirring often.
  2. Stir in cheese; cook until thoroughly heated.
