Ranch Parmesan Chicken
Garlic-Herb SpinachIngredients
- ½ cup almond flour
- ½ cup freshly grated Parmesan cheese
- ½ tsp pepper
- 1 tsp garlic salt
- 6 Tbsp Ranch dressing
- 2 Tbsp water
- 1½ lb boneless, skinless chicken breasts
- ¼ cup butter, melted
Instructions
- Preheat oven to 400°F. Mix together almond flour, cheese, pepper, and garlic salt in a shallow bowl.
- Stir together Ranch and water in another shallow bowl. Dip chicken in Ranch, coating both sides. Coat in flour mixture, pressing gently to adhere.
- Place chicken in a lightly greased 13-x 9-inch baking dish. Drizzle with butter.
- Bake, uncovered, 20 to 25 minutes or until chicken is done.
Side Dish Ingredients
- 2 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
- 2 Tbsp olive oil
- ½ cup garlic-herb spreadable cheese
Side Dish Instructions
- Cook spinach in hot oil in a large nonstick skillet over medium heat 2 minutes or until thoroughly heated, stirring often.
- Stir in cheese; cook until thoroughly heated.
