Kung Pao Ground Beef
Cauliflower RiceIngredients
- 2 Tbsp canola oil
- 1 Tbsp grated ginger
- 3 cloves garlic, minced
- 2 lb ground beef (or use ground turkey)
- ½ lb green beans, trimmed and cut into 1-inch pieces
- 3 Tbsp low-sodium soy sauce
- 1 Tbsp sesame oil
- ½ cup water
- 1 Tbsp cornstarch (or use arrowroot)
- 1 (8-oz) can sliced water chestnuts, drained
Instructions
- Heat canola oil in a large skillet over medium-high heat. Sauté ginger and garlic 2 minutes; add beef, and sauté 4 minutes. Add green beans. Sauté 4 minutes or until beef is browned and crumbly and beans are tender.
- Stir together soy sauce, sesame oil, water, and cornstarch in a small bowl. Pour sauce and water chestnuts into skillet, stirring to coat beef. Cook 1 to 2 minutes, stirring gently, until thickened. Serve over Cauliflower Rice recipe.

- 2 (10-oz) pkg frozen riced cauliflower
- 1 tsp kosher salt
Side Dish Instructions
- Cook cauliflower rice in microwave according to package directions. Transfer to a bowl; sprinkle with salt.
