Ingredients

  • 12 oz whole-grain rotini pasta
  • 2 avocados, coarsely chopped
  • 3 Tbsp lemon juice
  • 2 cloves garlic
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta in a large saucepan according to package directions; drain, reserving ½ cup pasta water.
  2. Process avocados, lemon juice, and garlic in a food processor until smooth.
  3. Cook avocado mixture, pasta, and pasta water, if needed, in saucepan over medium heat 5 minutes until thoroughly heated. Sprinkle with cheese.

  • 2 pints grape tomatoes
  • 2 Tbsp olive oil
  • ⅓ cup pesto

Side Dish Instructions

  1. Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst.
  2. Transfer to a bowl. Toss with pesto.
