Ingredients
- 12 oz whole-grain rotini pasta
- 2 avocados, coarsely chopped
- 3 Tbsp lemon juice
- 2 cloves garlic
- 1 cup freshly grated Parmesan cheese
Instructions
- Cook pasta in a large saucepan according to package directions; drain, reserving ½ cup pasta water.
- Process avocados, lemon juice, and garlic in a food processor until smooth.
- Cook avocado mixture, pasta, and pasta water, if needed, in saucepan over medium heat 5 minutes until thoroughly heated. Sprinkle with cheese.

- 2 pints grape tomatoes
- 2 Tbsp olive oil
- ⅓ cup pesto
Side Dish Instructions
- Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst.
- Transfer to a bowl. Toss with pesto.
