Creamy Parmesan Chicken and Rice

Ingredients

  • 1½ Ib boneless, skinless chicken thighs, cubed (or use boneless, skinless chicken breasts)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ½ tsp salt
  • 2 Tbsp olive oil
  • 2 (8.8-oz) pouches microwavable brown rice
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Cook chicken, onion, garlic, seasoning, and salt in hot oil in a large skillet over medium-high heat 8 minutes or until chicken is browned and done.
  2. Meanwhile, cook rice according to package directions. Add rice, cream, and cheese to skillet; cook 2 to 3 minutes or until thick and creamy.

  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg chopped kale
  • 2 Tbsp white wine vinegar
  • ½ tsp salt

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 1 minute or until fragrant. Add kale, vinegar, and salt; cook 5 minutes or until kale wilts.
