Creamy Parmesan Chicken and Rice
Wilted Kale with Garlic
Ingredients
- 1½ Ib boneless, skinless chicken thighs, cubed (or use boneless, skinless chicken breasts)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp Italian seasoning
- ½ tsp salt
- 2 Tbsp olive oil
- 2 (8.8-oz) pouches microwavable brown rice
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
Instructions
- Cook chicken, onion, garlic, seasoning, and salt in hot oil in a large skillet over medium-high heat 8 minutes or until chicken is browned and done.
- Meanwhile, cook rice according to package directions. Add rice, cream, and cheese to skillet; cook 2 to 3 minutes or until thick and creamy.

- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (16-oz) pkg chopped kale
- 2 Tbsp white wine vinegar
- ½ tsp salt
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium heat 1 minute or until fragrant. Add kale, vinegar, and salt; cook 5 minutes or until kale wilts.
