Potato-Kielbasa Bowls

Ingredients
- 2 (20-oz) pkg refrigerated diced potatoes
- 1 (14-oz) pkg kielbasa sausage, sliced
- 1 onion, thinly sliced
- 3 Tbsp olive oil, divided
- 3 Tbsp water
- 3 Tbsp apple cider vinegar
- 2 Tbsp Dijon mustard
- ¾ tsp dried thyme (or use 1 Tbsp fresh thyme)
- 1 (6-oz) pkg baby spinach
Instructions
- Preheat oven to 450°F. Spread potatoes in a single layer on two large rimmed baking sheets. Bake 20 minutes or until browned, rotating pans halfway through cooking.
- Meanwhile, cook sausage and onion in 2 Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until browned.
- Stir together water, vinegar, mustard, 1 Tbsp oil, and thyme. Add to skillet with spinach, and toss. Cook 2 minutes or until spinach wilts. Serve sausage mixture over potatoes.
