Zucchini Turkey Burgers

Ingredients
- ½ zucchini, grated
- 1 shallot, finely chopped
- ½ lb ground turkey
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- 3 Tbsp whole wheat panko breadcrumbs
- 1 large egg, lightly beaten
- 2 whole wheat hamburger buns, split and toasted
- 4 Bibb lettuce leaves
- 1 organic tomato, sliced
Instructions
- Grate zucchini on large holes of a box grater. Squeeze zucchini between layers of paper towels to remove excess moisture.
- Combine zucchini, shallot, turkey, salt, pepper, panko, and egg in a large bowl. Shape into 2 patties.
- Preheat grill to medium-high heat. Grill patties, covered, 5 to 6 minutes per side or until no longer pink. Serve burgers on buns with lettuce and tomato.
Side Dish Ingredients
- 2 ears corn, shucked (or use frozen ears corn)
- 1 Tbsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 watermelon wedges (see Note)
Side Dish Instructions
- Preheat grill to medium-high heat. Brush corn with oil; sprinkle with salt and pepper.
- Grill corn, covered, 12 to 15 minutes, turning occasionally, or until tender.
- Serve watermelon and corn on each plate.
